Meatless Monday Zesty Arugula-Quinoa Salad Alongside Parmesan Cheese

That's my rant for the day. Let's at nowadays  get dorsum to eating healthy. On July iv th, nosotros went over to my friend's house to sentry fireworks from her terrace. I wanted to build a salad for her every bit she also wants to "eat healthy".
So that afternoon when I went to the farmer's market, I bought about arugula, fresh radish too about fruits. Being that it was Friday, it was laundry solar daytime too I had to larn that done earlier leaving to their house. Luckily her thoughtful hubby ordered about Chow fun amongst lots of vegetables for me amongst about eggplant dish. Funnily, nosotros thoroughly enjoyed the rice noodles!

I sliced upwards cerise radish, diced about cucumber, chopped a few apricots,added leftover quinoa, made a lime dressing too topped it amongst about toasted almonds, cranberries too Parmesan cheese. Voila! H5N1 wholesome dinner was ready!

Servings: 2


Ingredients:


Arugula: 1 modest bunch, washed & ,leaves separated.
Cooked Quinoa: 1 cup
Red radish: iii medium sized, cleaned,sliced thin.
Cucumber: 1 medium, peeled too diced.
Apricots: 4, sliced lengthwise
Lime juice: 3/4tbsp, from 1 modest lime.
Rice vinegar: 1/2 tbsp
Olive oil: iv tbsp( I used extra virgin)
Sea Salt: 1/8 tsp
Black pepper powder: 1/4 tsp, freshly ground.
Parmesan cheese: two tbsp, grated/ powdered.
Almonds: two tbsp,toasted too slivered.
Craisins: two tbsp.

Method:


In a salad bowl, accept arugula leaves, cooked quinoa, diced cucumber, sliced radish too apricots.

In a modest jar, accept  lime juice, rice vinegar,olive oil, common salt & pepper . Close the offend too milkshake well.Add this to the salad too mix well.

Top it amongst Parmesan cheese, slivered almonds too cranberries.



Serve immediately.


Cooking made easy:


This salad tin hold out served past times layering the ingredients: build a bed of arugula, house the quinoa on top, too therefore the cucumbers too radish , pour the dressing too  top it amongst apricot, almond, cranberries too Parmesan cheese.

You could substitute strawberries for the apricots ,walnuts for the almonds too feta cheese /blue cheese instead of Parmesan cheese.
