Gobhi Mussallam ( Whole Cauliflower Barbecued Together With Served Inwards A Creamy Onion-Tomato Sauce)








Recently nosotros took our kids apple tree picking to a farm far far away inwards Long Island. This farm also had lot of fresh vegetables grown locally at the farm. While I came abode amongst a patch bounty of fresh vegetables, I peculiarly came abode amongst these humongous orange( cheddar) too white cauliflowers each of which weighed atleast 10 lbs!! Just to supply y'all amongst a mental visual: each cauliflower was every bit large too heavy every bit a huge watermelon! I also already had ii "big" shop bought cauliflowers sitting inwards my refrigerator. What did I practice amongst all these cauliflowers? Influenza A virus subtype H5N1 whole lot actually!! Servings: 4-6


Ingredients:


Cauliflower: 1 whole medium head.

For marination:

Greek yogurt: 1 cup
Ginger garlic paste: ii tsp
Tandoori masala: three tsp
Kashmiri chilli powder: 1/2 tsp
Salt: to taste

For the sauce:

Oil: 2tbsp
Onions: ii medium chopped
Ginger: 1 inch, minced
garlic :  4-5 cloves, minced
Tomato glue : 1 can
Green chillies: four medium
Cashews: 6-8 ( optional)
Almonds : 4-6 ( optional)
Haldi( turmeric powder):1tsp
Coriander powder: 1tbsp
Cumin powder: 1tsp
Garam masala powder: 1 tsp
Chilli powder: 1/2 tsp
Kasoori methi ( dried fenugreek leaves): 1 tsp
Heavy cream: 1/2 cup( tin last substituted amongst almond milk/ kokosnoot milk)
Cilantro leaves: 1 tbsp chopped fine
Sugar:1/2 tsp
Salt: to taste

The Gobhi ( cauliflower):

Clean the cauliflower.

Blanch the cauliflower yesteryear keeping it inwards hot H2O that has a pinch of common salt inwards it for five minutes. Or only operate along it inwards the microwave for ii minutes.

Now marinate it amongst all the ingredients nether 'for marination'. Mix good too operate along it inwards the fridge for at to the lowest degree ii hours.


Line a baking tray amongst foil, house the cauliflower on it too bake it for 30-45 mins at 350 degrees inwards the oven turning ane time inwards between.

The sauce:

Now add together the haldi powder, coraiander too cumin powders too sauté for xxx seconds. 

Add crimson chilli pulverization too garam masala too sauté for to a greater extent than or less other xx seconds. 

Add the cashew-almond glue and  1/2 loving cup H2O to sparse the sauce. Let it simmer. 

Add Kasoori methi, common salt too pinch of saccharide too mix well. 

Add the 1/2 loving cup heavy cream, permit it simmer for 1-2 mins.



Putting it together:

To the higher upwardly sauce, add together the baked/ grilled whole cauliflower. Cover too permit it simmer for five minutes for it to all come upwardly together.

Garnish amongst cilantro leaves.






Serving:
Carve a piece of the cauliflower too serve it amongst a trivial sauce.


Serve hot amongst plainly rice/ jeera/ rice/ peas-carrot pulao or only amongst to a greater extent than or less sort of roti/naan/bread.
