Meatless Monday Stuffed Omelette


One of my all-time favorite, indulgent  too filling breakfast is the Stuffed Omelette stuffed amongst a diversity of vegetables similar mushrooms, spinach, peppers, onions, tomatoes too sprinkled amongst shredded cheese served amongst staff of life toasted golden dark-brown too a dollop of butter. Truly indulgent right?? But yummy too delicious! It is my weekend exceptional too extra- exceptional because my hubby makes it for me. Once a week, during the weekend he makes this lovely omelette for me for breakfast every bit an appreciation for all my week-long cooking. I must nation that I appreciate it too relish too relish every terminal seize amongst teeth of it!

Servings: 2


Ingredients:


Bread: 4 slices( ii each)
Butter: plenty to lightly spread on 4 slices of staff of life too 1/2 tsp each to create the omelette.( you lot tin purpose crude oil instead of butter for cooking the eggs if you lot choose).
Organic eggs: 4 large or extra-large eggs ( ii each)
Onion: i medium, chopped .
Tomatoes: 1 small, chopped
Bell pepper: 1 small, sliced thin, lengthwise.
Mushrooms: 10-12, small, sliced thin. I used babe Bella, whatsoever edible mushroom tin hold upwards used.
Oil: 1 tsp
Salt: to taste
Milk: ii tbsp
Pepper: 1/4 tsp + 1/4 tsp ( for the vegetables too the eggs)
Grated Cheese: ii tbsp ( I used mozzarella), whatsoever cheese tin hold upwards used.

Method:


Heat a crude oil inwards a frying pan/ skillet. Sauté onions until they wilt, add together inwards the tomatoes, too then the mushrooms too the bell peppers too sauté for 1-2 minutes. Add tabular array salt too freshly seat down pepper.




Beat ii eggs amongst 1 tbsp milk until frothy.

Toast the bread, butter it too run on it laid inwards the serving plate.

Heat a griddle/ skillet on medium heat. Smear butter, add together the beaten eggs. Sprinkle tabular array salt too freshly seat down pepper every bit per taste. When done, flip it to create the other side.




As shortly every bit you lot flip it, house the cooked vegetables on i one-half of it. Sprinkle the grated cheese.Fold the omelette too allow it laid for 10-15 seconds. Slide it onto the serving plate.




Eat it instantly when hot.
