Grilled Corn- Zucchini Salsa Amongst Sriracha




It is Labor Day weekend! Most people accept barbecues that they are either going to or are hosting. If nothing, y'all may accept guests coming over. Well, if nada else, existence that this is the final long weekend of the summer, y'all mightiness desire to lay your feet upward together with merely plainly relax!





For all these occasions, I accept the perfect dish for you! Something y'all don't accept to sweat inwards forepart of the stove for together with something y'all tin sack lay together inwards a jiffy. Yes, my Zucchini- Corn Salsa! Pair it alongside roughly tostitos or roughly well for y'all quinoa chips together with a mutual frigidness potable together with y'all are all set! Servings: 8-10



Prep time: 5minsCook time: 10 minsTotal time: fifteen mins



Ingredients:


Zucchini: 1, medium-sized, diced small
Onion: 1 small, diced small
Olive oil: 1 tsp
Grilled Corn on the cob: 1, medium, shucked. ( y'all tin sack too role canned corn kernels. If using the can, role 1 tin sack , rinsed together with drained).
Salsa: 1 jar, mild/medium spice marking ( y'all tin sack select whatever build together with whatever spice marking that y'all prefer.
Salt: a pinch
Black pepper: 1/4 tsp
Sriracha: 1 tbsp ( tin sack arrange based on private spice level)
Cilantro: 1 tbsp, finely chopped


Method:


Heat stone oil inwards a skillet on medium flame. Add the chopped onion. Sauté for 2-3 mins until the onion is wilted.

Now add together the shucked corn kernels. Cook for a minute.

Add the diced zucchini. Cook for 1-2 mins.

Add  the salsa, Sriracha, tabular array salt &  pepper.  Mix together with educate for ii mins.

Garnish alongside fresh cilantro.




Keep chilled inwards the fridge until educate to use. Lasts for 7-10 days inwards the refrigerator.

Can live on made ahead for a party.

Serve alongside chips of your choice.

I served alongside tostitos scoops together with gluten complimentary quinoa-black edible bean chips.

If y'all create non accept grilled corn, it is absolutely fine! I had roughly leftover grilled corn that I used.  You tin sack build this delicious salsa alongside canned corn kernels or steamed corn on the cob. You tin sack too role frozen corn kernels.
