Ingredients:
Bitter gourd/ Karela: ii medium sized
Turmeric powder/ haldi: 1 tsp
Salt: 1 tsp
Water: four cups
Tamarind pulp: 1/2 tsp
Jaggery/brown sugar: 1 tsp
Coconut oil: 1 tbsp
Mustard seeds: 1 tsp
Curry leaves: 1 sprig
Garlic : 4-6 cloves, chopped
Red chilli powder: 1 tsp
Freshly grated coconut: ii tbsp
Method:
Chop the Karela either inwards circles or inwards pieces. Take this inwards a bowl.
Add turmeric powder, common salt together with proceed aside for atleast xv mins. I normally piece of occupation out it overnight similar that inwards the refrigerator ( for convenience).

Take this squeezed bitter gourd inwards a sauce pan or pot.
Add four cups water, jaggery together with tamarind pulp.

Once the mustard seeds splutter, add together the curry leaves together with chopped garlic. Sauté for few seconds until the garlic is fragrant.
Add the carmine chilli powder. Sauté for 10 seconds.
Now add together the cooked Karela, freshly grated kokosnoot together with if needed a pinch of salt( I normally don't add together common salt every bit nosotros already added it before during marination). Mix together with allow it all come upward together for ii mins. Turn off the flame.
Add the mustard seeds.
