Cabbage-Carrot Kosumbari ( Salad); Meatless Monday



Vegetables shape the biggest component subdivision of my plate for every unmarried meal! You could tell that I create total myself alongside veggies!Almost all of my meals convey a salad included. Our traditional Indian salads are known equally kosumbaris as well as are non alone tasty but extremely salubrious alongside minimal amount of fatty inwards it. One of the regular kosumbaris that Amma ( mother) used to brand was the carrot or cabbage Kosumbari. My woman bring upwards cooks the healthiest meals!! Servings: 2


Ingredients:


Grated carrots: 1 loving cup ( close ii medium sized carrots)
Shredded cabbage: 1 loving cup ( pocket-sized slice of cabbage, chopped /shredded )
Green chilli: 1 small, finely chopped
Lemon juice: 1-2 tbsp ( 1/2 medium lemon)
Freshly grated coconut: 1 tbsp ( optional)
Salt to taste
Cilantro ( coriander leaves) : 1 tsp for garnishing.

For tempering :


Coconut oil: 1 tsp
Mustard seeds: 1/2 tsp
Curry leaves: 1 sprig
Hing ( asofoetida)powder: a pinch

Method:


In a bowl, mix together shredded cabbage, grated carrots, freshly grated coconut, chopped greenish chilli,lemon juice & salt.

Tempering:

Heat kokosnoot crude oil inwards a pocket-sized frying pan. Add the mustard seeds. Once they splutter, add together curry leaves as well as hing. Turn off the flaming immediately. Add it to the higher upwards bowl as well as mix well.



Garnish alongside cilantro( coriander leaves).

Serve equally an accompaniment to whatever repast or bask it simply similar that!
