Chano Ani Kanang Ghalnu Upkari ( Chick-Pea Together With Sweetness Spud Stir-Fry)




This is 1 of my favorite dishes for breakfast. It is nutritious too filling. Not to mention, slow to make! I ordinarily couplet it amongst to a greater extent than or less other traditional favorite combination Phova chutney or the non-traditional combination: a overnice while of buttered toast. The latter is my husband's preferred combination. This Chana upkari is traditionally made amongst dark Chana or dark chick-peas, you lot could too larn inwards amongst white chick peas. Servings: 4


Ingredients:


Chick peas( Chana): two cups dark or white cooked. ( If using canned, 1 10 oz can)
Sweet potato: 1 medium sized, washed too chopped to medium cubes.
Coconut oil: 1 tsp
Mustard seeds: 1/2 tsp
Green chillies: 2-3 slit lengthwise.( tin live adjusted based on your spice level).
Hing( asofoetida): a pinch if using powder, 1 tsp if using solution.
Salt: to taste
Jaggery/ dark-brown sugar: 1 tsp
Freshly grated coconut: 1 tbsp

Method:


Heat a sauté pan/ kadai amongst oil. Add mustard seeds. 

Once the mustard seeds splutter add together the slit greenish chillies, sauté for few seconds. 

Now, add together the diced sweetness potato, hing, salt, jaggery too two cups water.

Cover too gear upward until the sweetness potatoes are 3/4 done. 

Now, add together inwards the cooked chick peas too mix well. Cover too gear upward on medium until the sweetness spud is cooked well.

If using dried chick peas, soak it overnight amongst a pinch of baking soda. This significantly reduces the cooking fourth dimension too makes the chick peas overnice too tender.
