Taushe Idli/Dosa ( Cucumber Rice Cakes & Crepes); Meatless Monday



Recently I visited my cousin who lives upstate. She had a huge bounty of vegetables inward her garden inward this summer. She gave me a bunch of tomatoes together with around cucumbers to pick out habitation amongst me. I was thrilled to have fresh vegetables that were only plucked off the plants! The cucumbers were huge together with delicious. Looking at them made me nostalgic together with crave for taushe idli. Taushe idli / Tausali is around other real traditional Mangalorean Konkani breakfast detail that real few people are familiar amongst elsewhere! It is basically cucumber- rice- kokosnoot steamed cakes that is commonly sweetened amongst jaggery( unprocessed sugar). The same batter tin last slightly diluted together with made into crepes. Both gustation proficient to me. I am partial to the idlis to a greater extent than than the crepes ( this is i rare representative where I don't profess my love for dosas!). There is also a savory version that tin last made inward which jaggery is non used together with the crepe is served amongst a spicy chutney/dip.



These idlis hold off similar the regular idlis inward variety together with size but are golden yellowish inward color. Some people also steam the batter inward a plate together with spell it into squares/rectangles similar a dhokla.
The steaming method for this is the same every bit for regular idlis. This is i idli for which the batter is non fermented at all. Ingredients:


White rice/dosa rice: two cups
Cucumber: 1 large sized, peeled and  grated.
Freshly grated coconut: 1 cup
Jaggery: 1.5 cups, grated
Salt: a pinch
Water: six cups for soaking the rice.
Oil: to grease the idli mold/skillet.


Method:


Soak the white rice inward six cups of H2O for atleast 1-2 hours.

Using your hands, crush out every bit much H2O every bit possible from the grated cucumber. Reserve the water. Keep the squeezed cucumber inward a unlike bowl.

Grease the idli moulds together with piece of job on ready.

Add H2O to the idli steamer every bit per the pedagogy on the steamer or to the required H2O level. Heat the steamer on medium heat.

Add 1 ladleful of to each of the impressions inward the mold. Place the rack inward the steamer. Steam on high open fire for 10-12 mins.Test if done yesteryear inserting a toothpick. If the toothpick comes out clean, it is done.




Let it cool downward for 5-10 mins earlier attempting to take away the idli out of the mold. Use a butter knife to take away it. If the plate has been greased well, the idli should come upward correct out!

Serve hot amongst butter or ghee ( clarified butter ) on top.

To brand crepes:

Heat the griddle/tawa. Grease the griddle/skillet amongst kokosnoot oil.

Add a ladleful of batter to the oculus of the griddle. Spread it yesteryear moving the ladle inward circles over the batter together with spreading it. If y'all don't pick out jaggery, y'all tin purpose brownish saccharide or coconut-palm sugar.

The no-grind method:

Tip for salubrious living:
